History and food safety in the nineteenth century in Huelva

A thesis from the University of Huelva studying the scenarios, the development of activity and attention to food dispensed in Huelva in this time.

During the second half of the nineteenth century produced in Spain a substantial change in terms of food and establishments related to the handling and sale, which mainly affected abattoirs, fishmongers and markets municipally owned. In this context, significant sites were built in Huelva such as the abattoir in the current  Miss Whitney Avenue (1896), the market of El Carmen (1886), the fishmonger of El Carmen (1884) and the fishmonger of El Dique (1893- 1894).

Maria Luisa Delgado Calero is the author of the thesis «Control, regulation and fraud: a history of food in Huelva (1855-1904)» directed by María Antonia Peña Guerrero of the Department of History II and Geography of the University of Huelva and member of CEIMAR, along with Encarnación Bernal Borrego of the History of Medicine  Unit of the University of Seville.

This thesis is a period in which at national and even European level were beginning to develop profound changes in such significant aspects from the point of view of the food-health relationship as the behavior of the disease or organization of the health system. Also they began to glimpse the beginnings of the reformulation of food that was to occur in industrialized societies of the twentieth century, as the automation in food production and transport, among other things, allow the emergence of new foods like condensed milk or saccharin.
